Amish buttermilk biscuits

Ingredients

¼cupInstant lowfat dry milk (I
Used nonfat)
1tablespoonBaking powder
2tablespoonsSugar (I used less)
1teaspoonSalt
2teaspoonsCream of tartar
½cupCold butter in pieces
½cupCold lard
14tablespoonsCold buttermilk

Directions

Pulse the dry ingredients with the butter and lard until grainy, NOT blended! Add the cold buttermilk, and mix until the dough comes together.

Place dough on a floured cloth or marble slab, and knead a few times with floured hands. (Keep the dough cold!) Pat or roll out to ¾-inch thick, and cut out biscuit rounds or shapes. (You can use a cookie cutter!)

These biscuits can be frozen ahead, or baked immediately.

Baking time: Bake at 400 degrees F for 13-15 minutes if fresh, and 15-18 minutes if frozen.
