Margaret's lasagna

Yield: 8 servings

Measure Ingredient
1 pounds Ground beef
1 tablespoon Parsley flakes
½ teaspoon Salt
1 pounds Can diced tomatoes
3 cans 6oz tomato paste
1 pack 10oz lasagna noodles
3 cups Cottage cheese
2 eaches Beaten eggs
½ teaspoon Salt
½ teaspoon Pepper
⅛ cup Parsley flakes
½ cup Parmesan cheese
1½ pounds Grated mozzarella cheese

Brown ground beef. Drain fat and wash with warm water to remove excess fat. Add parsley flakes, salt, tomatoes and tomato paste.

Simmer uncovered for 30 minutes. Combine cottage cheese, eggs, seasonings and parmesan cheese. Mix with meat sauce. in a 9x13 pan, pour half the mixture over a layer of cooked noodles. Cover with half the mozzarella cheese. Repeat layers. Bake at 375 degrees for 30-45 minutes. Let stand 10 minutes before serving.
