Mara's malibu salad

Ingredients

1Head your favourite lettuce
1Endive
1Bag beansprouts
1canWater chestnuts
2Avocados
1canChinese dry noodles
1canHeart of palm
1poundsChicken or prawns
1canBaby mandarin oranges
2Floz soy sauce
1teaspoonFresh ginger
4Floz olive oil
Lemons - squeeze to taste
2tablespoonsBalsamic vinegar
2Generous splashes orange juice
2tablespoonsGrated parmesan cheese
Fresh coriander to taste

Directions

DRESSING

Wash and chop all vegetables finely and mix together in a big bowl. Add oranges and Chinese noodles. Saut‚ chicken strips or prawns in olive oil, salt, pepper and fresh coriander to taste.

When thoroughly cooked, add the chicken or prawns to the vegetable mix.

Pour on dressing so the mix is wet, but not swimming in it. Chill in the refrigerator for 15 minutes and eat.
