Maple-pumpkin saute

Yield: 4 servings

Measure Ingredient
2 tablespoons Clarified Butter
4 cups Fresh Pumpkin; peeled and cubed, (about a 1 1/2-pound pumpkin)
1½ cup Unpeeled Red Delicious Apple; cored and chopped
½ cup Onion; finely chopped
⅓ cup Raisins
3 tablespoons Maple Syrup
¼ teaspoon Salt
⅛ teaspoon Ground Ginger

Warm the clarified butter in a heavy skillet over medium-high heat. Add the cubed pumpkin, unpeeled apple, onion, and raisins. Cover and cook the mixture for about 20 minutes or until pumpkin is tender, stirring occasionally.

Stir in the maple syrup, salt, and ginger, and serve to grateful guests.
