Maple mousse filling

Measure Ingredient
3 Egg yolks
4½ ounce Warm maple syrup
3 ounces Boiling water
1 tablespoon Gelatin
10⅔ ounce Cream; (35 percent)

Beat egg yolks and warm maple syrup until thickened. Sprinkle gelatin over boiling water and slowly add to the first mixture. Whip cream until frothy and fold into the preparation.
