Mango-corn relish

Ingredients

2Ears corn; unshucked
1Mango; peeled, seeded and cut in 1/4\" dice
2tablespoonsFinely diced red onion
2tablespoonsFinely diced red pepper
1tablespoonFinely chopped fresh cilantro
1teaspoonFresh lime juice
1teaspoonMaple syrup
Salt

Directions

Preheat oven to 350 degrees. Place unshucked corn on a baking sheet in preheated oven for 20 minutes. Remove and allow to cool. Shuck and remove silk. Cut kernels from cob, avoiding the chewy heart alongside the cob.

Combine corn with remaining ingredients and let stand for 1 hour before serving.
