Mama's leek soup

Yield: 4 servings

Measure Ingredient
½ pounds Leeks
2 ounces Butter or margarine
½ pint White sauce mix
1 pint Milk
1 ounce Cheddar cheese, grated
\N \N Salt and pepper
\N \N Croutons

Thinly slice the leeks, wash thoroughly and drain well. Melt the butter, add the leeks, cover and cook gently for about 10 minutes, until tender. Off the heat, shower in the contents of the sauce mix packet and gradually add the milk, stirring briskly. Bring to the boil, stirring, and cook for about 3 minutes. Puree in a blender or work through a wire sieve. Add the cheese, reheat and adjust seasoning-add a little more milk if necessary. Serve with toast croutons. Submitted By JAMES LEAR On 10-06-95
