Leek soup

Ingredients

QuantityIngredient
poundsLeeks (about 6 cups) washed, trimmed, and cut into 1 in. pieces
3cupsChicken Broth
2Apples, peeled and cut into 1/2 inch pieces
1Potato, peeled and thinly sliced
½cupOrange Juice
½cupTomatoes, chopped
½cupCarrots, thinly sliced
1tablespoonFresh basil OR 1 1/2 t dried
½teaspoonCurry Powder
Salt and Pepper to taste

Directions

Combine all ingredients in a soup kettle. Cover and bring to a boil.

Simmer 20 - 25 minutes. Remove from heat and cool slightly. Process in batches, in a blender or processor until smooth. Reheat and serve.
