Yield: 6 servings
Measure | Ingredient |
---|---|
1½ pounds | Leeks (about 6 cups) washed, trimmed, and cut into 1 in. pieces |
3 cups | Chicken Broth |
2 | Apples, peeled and cut into 1/2 inch pieces |
1 | Potato, peeled and thinly sliced |
½ cup | Orange Juice |
½ cup | Tomatoes, chopped |
½ cup | Carrots, thinly sliced |
1 tablespoon | Fresh basil OR 1 1/2 t dried |
½ teaspoon | Curry Powder |
Salt and Pepper to taste |
Combine all ingredients in a soup kettle. Cover and bring to a boil.
Simmer 20 - 25 minutes. Remove from heat and cool slightly. Process in batches, in a blender or processor until smooth. Reheat and serve.
