Yield: 6 Servings
Measure | Ingredient |
---|---|
1 tablespoon | Olive oil |
1 pack | Frozen chopped spinach, cooked and slightly drained |
¼ teaspoon | Garlic powder |
1 dash | Pepper |
½ teaspoon | Salt |
⅔ cup | Low fat cottage cheese |
¼ cup | Parmesan cheese |
½ teaspoon | Dried basil |
4 cups | Cooked macaroni |
In a blender, combine all except the pasta. Blend until smooth. Pour over hot pasta and reheat till hot. (If this seems a bit dry, you can add a little milk.) Serve sprinkled with some additional parmesan.
