Macadamia nut and white-chocolate chunk cookies

Yield: 1 Servings

Measure Ingredient
½ cup Shortening- butter flavor
½ cup Butter
2½ cup All-purpose flour
1 cup Packed brown sugar
½ cup Sugar
2 \N Eggs
1 teaspoon Vanilla
½ teaspoon Baking soda
12 ounces Vanilla flavored baking chunks
1 \N Jar (3 1/2 oz) macadamia nuts; chopped

In a large mixing bowl, beat shortening and butter with an electric mixer on medium to high speed about 30 seconds or until softened. Add about half of flour to shortening mixture. Add brown sugar, sugar, eggs, vanilla and baking soda. Beat until thoroughly combined. Beat in remaining flour. Stir in vanilla chunks and nuts. Drop dough by rounded teaspoons 2 inches apart onto ungreased cookie sheets. Bake in a 375 degree oven for 8 to 10 minutes or until edges are lightly browned. Remove cookies; cool on wire racks.

Makes about 60.

I made these for xmas and they are really good.
