Luscious lemon cake

Yield: 1 Servings

Measure Ingredient
4 ounces Soft butter; (1/2 stick)
6 ounces Caster sugar; (7/8 c superfine)
6 ounces Self-rising flour; (1 3/8 cup)
4 tablespoons Milk
2 larges Eggs
1 \N Lemon; grated rind of
3 tablespoons Icing sugar; rounded (powdered)
3 tablespoons Fresh lemon juice



Grease and line a 2 pound loaf tim. Set oven to 350 degrees F or Mark 4.

Cream butter and sugar, add eggs, sifted flour, finely grated lemon rind and milk. Mix well to a soft dropping consistency. Put in tin, smooth top and bake for 40-50 minutes until firm. Mix sifted icing sugar and lemon juice and pour over cake as soon as it comes out of the oven. Leave in tin until completely cold.
