Lowfat brown gravy

Measure Ingredient
1 tablespoon Margarine
2 tablespoons Carrot, diced
2 tablespoons Onion, diced
2 tablespoons Tomato puree
½ each Garlic clove
1 x Thyme leaves, dash
1 tablespoon Flour
2 tablespoons Celery, diced
1 cup Beef broth (fat skimmed)
1 each Bay leaf
1 x Pepper, dash

Melt margarine. Add flour and cook for 3 minutes. Add vegetables and cook for 5 minutes until lightly browned. Remove from heat and stir in broth. Add remaining ingredients and simmer for 4 to 5 minutes.

Let cool slightly. Remove bay leaf and process in blender until smooth.
