Lowfat brown gravy

Ingredients

2tablespoonsCarrot, diced
2tablespoonsOnion, diced
2tablespoonsTomato puree
½eachGarlic clove
1xThyme leaves, dash
1tablespoonFlour
2tablespoonsCelery, diced
1cupBeef broth (fat skimmed)
1eachBay leaf
1xPepper, dash

Directions

Melt margarine. Add flour and cook for 3 minutes. Add vegetables and cook for 5 minutes until lightly browned. Remove from heat and stir in broth. Add remaining ingredients and simmer for 4 to 5 minutes.

Let cool slightly. Remove bay leaf and process in blender until smooth.
