Lime pudding

3 | tablespoons | Butter; softened |
2 | Eggs; separated | |
3 | tablespoons | Lime juice |
1 | teaspoon | Lime rind; grated |
1 | cup | Milk |
Whipped cream; opt. |
Combine sugar, flour, and butter in a mixing bowl. Add unbeaten egg yolks, lime juice, lime rind, and milk; blend well. Beat egg whites until stiff; fold into yolk mixture. Pour into a greased 1-quart mold or 6 custard cups. Place in pan of hot water and bake at 325 degrees for 1 hour (35 minutes for custard cups).
This pudding has a cakelike top with a smooth, delicious lime sauce beneath. Serve warm or cold with or without whipped cream.
