|1||Lettuce, leaf; 1 head|
|½ small||Garlic clove; crushed|
|2 tablespoons||Sour cream; or table cream|
|1 dash||Nutmeg; freshly ground|
Separate the lettuce leaves. Wash and dry. Cut into bite sized pieces.
(Lettuce will measure about 8 cups). Melt the butter in a wide saucepan, over medium heat. Add the garlic and stir for a minute.
Stir in lettuce just until evenly coated with butter. Add the sour cream and nutmeg and stir over medium heat until lettuce is warm but still crunchy. Per serving: 68 calories, 3½ carbohydrates, 6 g fat, 67⅘ mg calcium, 1⅖ mg iron, 1.3 g fiber SERVES: 4
