Lemon-butter spritz cookies

Measure Ingredient
2 cups Butter; (no substitutes)
1¼ cup Sugar
2 \N Eggs
\N \N Grated peel of 1 lemon
2 teaspoons Lemon juice
1 teaspoon Vanilla extract
5¼ cup All-purpose flour
¼ teaspoon Salt
\N \N Colored sugar

In a large mixing bowl, cream butter and sugar. Add the eggs, lemon peel, lemon juice and vanilla; mix well. Stir together flour and salt; gradually add to creamed mixture. Using a cookie press, shape into designs on ungreased cookie sheets. Sprinkle with colored sugar. Bake at 400~ for 8-10 minutes or until lightly brown around the edges. Yield: about 12 dozen.
