|2 cups||Butter; (no substitutes)|
|Grated peel of 1 lemon|
|2 teaspoons||Lemon juice|
|1 teaspoon||Vanilla extract|
|5¼ cup||All-purpose flour|
In a large mixing bowl, cream butter and sugar. Add the eggs, lemon peel, lemon juice and vanilla; mix well. Stir together flour and salt; gradually add to creamed mixture. Using a cookie press, shape into designs on ungreased cookie sheets. Sprinkle with colored sugar. Bake at 400~ for 8-10 minutes or until lightly brown around the edges. Yield: about 12 dozen.
