Lemon rice #2

Yield: 4 Servings

Measure Ingredient
1 cup Uncooked white rice
2 tablespoons Butter or margarine
2 Cloves garlic; minced
1 teaspoon Grated lemon peel
¼ teaspoon Pepper
2 cups Chicken broth
2 tablespoons Chopped fresh parsley

Lower heat, cover tightly and simmer for 15 minutes or until liquid is absorbed. ( Cook brown rice for about 45 minutes: parboiled rice for about 20 minutes.) Stir in parsley and serve.

Note: Serve with your favorite meat, chicken, or fish. For added flavor, try adding a spice, some chopped green bell pepper, or a few chopped walnuts.
