Lemon and herb grilled trout

| 2 | Fresh or frozen whole trout; gutted, defrosted | |

| 25 | grams | Butter; (1oz) |
| ½ | Lemon; grated rind and | |

| Salt and freshly ground black pepper | ||
| 25 | grams | Flaked almonds; (1oz) |
| 1 | Sprig flat leaf parsley and watercress and | |
| ; lemon wedges to garnish | ||
Directions
1. Make three slits on each side of the trout and place on a grill pan.
2. Mix together the butter, lemon rind, lemon juice, parsley and seasoning.
Dot half over the trout. Place under a preheated moderate grill for 12-15 minutes, turning the trout once and dotting with the remaining butter during cooking.
3. Sprinkle the almonds over the trout and return to the grill for 1-2 minutes until browned. Serve immediately garnished with parsley sprigs and lemon wedges.
