Kitfo (steak tartare)

Ingredients

½cupOnions -- chopped fine
4teaspoonsGreen pepper -- chopped

1teaspoonGround ginger
½teaspoonGarlic -- chopped fine
½teaspoonGround cardamom
1teaspoonLemon juice
2teaspoonsBerbere or awaze
2teaspoonsSalt
2poundsGround round steak

Directions

In a large skillet, melt the niter kebbeh over low heat. Add onions, green pepper, chiles, ginger, garlic, and cardamom. Raise heat to med. and cook 2 min., stirring constantly. Place mixture in a bowl and cool for 15 min.

Stir in lemon juice, berbere and salt. Stir in raw beef and mix thoroughly. Serve with injera, breads, or crackers. Kitfo can also be stuffed in split Italian frying peppers and served in this fashion.
