Kaffir lime leaf, black eye and aduki bean croquettes

Ingredients

ounceBlack eyed beans; cooked
6Kaffir lime leaves
11 in piece lemon grass
ounceAduki beans; cooked
11 in piece root ginger; chopped
1Red chilies; (1 to 2)
Groundnut oil for frying

Directions

1. In a food processor combine all the ingredients and blend until a rich paste has developed.

2. Form small medallions from the paste.

3. Heat the oil in a large frying pan and shallow fry the croquettes for 3-4 minutes.
