Judy's chicken and broccoli with rice

Ingredients

| ½ | cup | Milk |
| 2 | tablespoons | Dijon mustard |
| 1½ | cup | Long grain rice |
| ½ | cup | Cheddar or Swiss cheese,grated or shredded |
| 1 | pounds | Boneless chicken breasts,cut into strips |
| 1½ | cup | Frozen broccoli cuts,thawed |
| 2 | tablespoons | Oil |
| 10¾ | ounce | Can condensed cream of chicken soup |
| 2 | tablespoons | Chopped pimento |
Directions
Bring water to a boil. Stir in rice. Cover and remove from heat. Let stand 5 minutes or until all water is absorbed. Meanwhile, cook and stir chicken in hot oil until lightly browned. Stir in soup, milk, mustard and cheese; add broccoli and pimento. Bring to a full boil.
Reduce heat and simmer 2 minutes. Pour over rice.
Makes 6 servings.
