1 cup | Bel paece cheese; diced |
¼ cup | Salami, diced; optional |
¼ cup | Olive oil |
2 tablespoons | Lemon juice |

* 1 small escarole heart, arugula or water-cress, sinach, romaine lettuce, etc)
Rinse the greens and dry thoroughly. Tear into bite-sized pieces.
Combine greens, onions, cheese and salami in a large salad bowl.
Combine the oil, lemon juice and seasonings and beat with a fork to blend well. Adjust seasonings, then pour over the dressing over the salad and toss gently to coat all ingredients well.
Serves 6.
