|1 small||Red onion; sliced thin|
|1 cup||Bel paece cheese; diced|
|¼ cup||Salami; diced, optional|
|¼ cup||Olive oil|
|2 tablespoons||Lemon juice|
|Fresh ground pepper|
|1 pinch||Oregano; optional|
* 1 small escarole heart, arugula or water-cress, sinach, romaine lettuce, etc)
Rinse the greens and dry thoroughly. Tear into bite-sized pieces. Combine greens, onions, cheese and salami in a large salad bowl. Combine the oil, lemon juice and seasonings and beat with a fork to blend well. Adjust seasonings, then pour over the dressing over the salad and toss gently to coat all ingredients well.
