Hearty reuben salad

Ingredients

4cupsIceberg lettuce; torn
16ouncesSauerkraut; rinsed and drained
1cupSwiss cheese; cubed
22 1/2 ounces each; sliced corned beef
; chopped
2tablespoonsFresh parsley; chopped
¼cupThousand island salad dressing;
¼Cup; (1/4 to 1/2)
½cupRye croutons
4Hard-boiled egg; quartered

Directions

In a large salad bowl or shallow platter, toss lettuce, sauerkraut, cheese, corned beef and parsley. Drizzle with dressing. Garnish with croutons and eggs. Serve immediately.
