Hearts of palm salad

Ingredients

1smallSweet green pepper, chopped
2ouncesJar sliced pimientos drained
1Celery stalk, chopped
2Green onions sliced thin
1tablespoonChopped fresh parsley leaves
2tablespoonsVegetable oil
¼cupLemon juice
Lettuce leaves

Directions

Drain the hearts of palm and cut them into bite-size pieces. Add remaining ingredients except lettuce leaves. Cover, refrigerate overnight. Serve on lettuce leaves.
