Hearts of palm & zucchini salad

Ingredients

| 2 | tablespoons | Jalapeno vinegar* |
| ½ | teaspoon | Salt |
| ½ | teaspoon | Pepper |
| 6 | tablespoons | Olive oil |
| 1 | medium | Zucchini; diced |
| 1 | medium | Tomato; diced |
| ½ | Sweet onion; diced | |
Directions
Combine all the ingredients and refrigerate for at least 2 hours.
