Habanore's mung beans

Ingredients

1cupYellow split mung beans
cupFinely chopped onions
1tablespoonGrated ginger
2teaspoonsMinced garlic
½teaspoonTurmeric
4eachesHabanero's Peppers
3cupsVegetarian broth
3mediumsPotatoes, peeled, quartered
1teaspoonSalt
1tablespoonOlive Oil
1teaspoonCumin seeds
2teaspoonsLemon juice
2tablespoonsChopped coriander leaves

Directions

Wash mung beans. Put in a deep pot with onions, ginger, garlic, turmeric, Habaneros's, cumin & 3 cups water. Bring to a boil & simmer for 45 minutes.

Add potatoes, salt & another 2 cups water. Cook for 15 minutes.

Add lemon juice & coriander leaves. Mix well. Serve with plain cooked rice.
