Habanore's mung beans

Ingredients

| 1 | cup | Yellow split mung beans |
| ⅔ | cup | Finely chopped onions |
| 1 | tablespoon | Grated ginger |
| 2 | teaspoons | Minced garlic |
| ½ | teaspoon | Turmeric |
| 4 | eaches | Habanero's Peppers |
| 3 | cups | Vegetarian broth |
| 3 | mediums | Potatoes, peeled, quartered |
| 1 | teaspoon | Salt |
| 1 | tablespoon | Olive Oil |
| 1 | teaspoon | Cumin seeds |
| 2 | teaspoons | Lemon juice |
| 2 | tablespoons | Chopped coriander leaves |
Directions
Wash mung beans. Put in a deep pot with onions, ginger, garlic, turmeric, Habaneros's, cumin & 3 cups water. Bring to a boil & simmer for 45 minutes.
Add potatoes, salt & another 2 cups water. Cook for 15 minutes.
Add lemon juice & coriander leaves. Mix well. Serve with plain cooked rice.
