Rice and beans cubano

Ingredients

1largeGreen pepper; chopped
2Cloves garlic; crushed
3tablespoonsOlive oil
216-oz cans black beans
½teaspoonOregano
3tablespoonsVinegar
3Pimientos; minced
3cupsHot cooked rice

Directions

Cook rice separately, hold aside. Saute pepper and garlic in oil until softened. Add rest of ingredients except rice. Cover and simmer until heated through. Taste for seasoning. Serve over rice.
