Grilled vegetable-hummus roll-ups

Ingredients

4Carrots; peeled, and
Sliced on the diagonal
4Zucchini; sliced on diagonal
4Yellow squash; sliced on diagonal
¼cupBalsamic vinegar
1teaspoonMinced garlic
1teaspoonDried oregano
1teaspoonDried basil
8Whole-wheat tortillas
1cupHummus; (see recipe)

Directions

Preheat the grill or broiler. In a large bowl, toss the vegetables with the vinegar, garlic, oregano, and basil. Grill or broil until browned and tender on each side. Remove. Warm the tortillas 30 seconds under the broiler or wrapped in plastic in the microwave to soften. To assemble, spread 2 tablespoons of Hummus on each tortilla. Top with ½ cup of the vegetables and roll up tightly. If desired, slice the rolls on the diagonal to serve. This recipe yields 8 servings.
