Grilled sweet potato wedges

Yield: 4 Servings

Measure Ingredient
2 pounds Medium sweet potatoes, cut lengthwise into 6 wedges
2 tablespoons Olive oil
\N \N Salt and pepper
\N \N Large pinch cayenne pepper

Light the grill. In a large saucepan of boiling, salted water, simmer the potatoes until almost tender, about 5 minutes. Drain, transfer to a large bowl and toss with the olive oil, salt, pepper and cayenne. Grill over moderate heat for about 15 mintues, turning, until tender and lightly charred.
