Green tomato cake

Yield: 2 servings

Measure Ingredient
1 cup Oil
1¾ cup Sugar
3 Eggs
1 teaspoon Vanilla
3 cups Flour
1 teaspoon Baking powder
1 teaspoon Baking soda
1 teaspoon Salt
½ teaspoon Cinnamon
1 teaspoon Ginger
2 cups Chopped green tomatoes 4 cups
1 cup Raisins
1 cup Walnuts

Directions: Cream together oil, sugar, eggs and vanilla. Sift dry ingredients. Add to egg mixture. Combine well. Add tomatoes, raisins, and nuts.

Makes 2 loaves Bake at 350 for 1 hour.
