Green pepper in tomato sauce

Ingredients

½cupThinly sliced onion
2Cloves garlic; minced
¼cupOlive oil
2cupsStewed tomatoes or 1 1-lb can
2teaspoonsSugar
1teaspoonSalt
1dashPepper
½teaspoonBasil
4largesGreen peppers; cut into 3/4\" strips (up to 5)

Directions

Cook onion and garlic in 1 tbsp of the oil till just tender; add tomatoes and spices. Simmer uncovered till sauce is slightly thick, about 20 min.

Cook pepper strips in remaining 3 tbsp oil, turning frequently till tender but still crisp. LIft from oil to serving dish; sprinkle with salt and pepper. Pour tomato sauce over green peppers; serve at once.
