Goat cheese burgers

Measure Ingredient
1½ pounds Lean ground beef
½ cup Fresh breadcrumbs
2 tablespoons Fresh lemon juice
2 teaspoons Lemon zest
2 teaspoons Thyme
1 teaspoon Salt
½ teaspoon Pepper
6 tablespoons Soft; fresh goat cheese
\N \N Hamburger buns
\N \N Red pepper relish; (recipe follows)

Combine beef with crumbs, lemon juice, lemon zest, thyme, salt and pepper.

Mix well. Form into 12 thin (4" diameter) patties. Place 1 tablespoon goat cheese atop 6 of the beef patties. Top each with remaining 6 patties. Seal at edges to enclose cheese. Grill until cooked through, about 5 minutes per side, or until desired doneness. Serve with buns and red pepper relish.
