Core apples; pare halfway down the apple; reserve some parings. Place apples in baking dish so they just fit, if possible. Too large a baking dish will evaporate too much syrup. Fill centers with raisins, dates or apricots. Combine ¼ c. sugar and cinnamon; sprinkle over fruits in centers of apples. Heat oven to 350 degrees. Combine water, 1¼ c. sugar and cinnamon and a few of the apple parings in saucepan. Bring to boiling over med. heat; lower heat; simmer 10 min, remove parings. Pour syrup over and around apples. Bake, basting frequently, 45-60 min or until apples are tender. Remove from oven; baste again. Sprinkle tops with sugar; place under broiler until tops are bubbly and glazed. Serve warm or chilled with cream, if desired. 6-8 servings.
