Garlic-chive mashed potatoes

Ingredients

cupYukon Gold or baking potatoes, peeled and cubed
6largesGarlic cloves, peeled
cup1% milk
½cupPlain low-fat yogurt
½teaspoonSalt
¼cupChopped fresh chives
Whole chives, optional

Directions

Place cubed potatoes and garlic in large saucepan and cover with water; bring to a boil. Reduce heat, simmer 15 minutes or until tender; drain well.

Return potato and garlic to saucepan. Add milk, yogurt and salt; beat at medium speed of an electric mixer until mixture is smooth. Add chopped chives and stir well. Garnish with whole chives, if desired.
