Garlic pumpernickel bread

1cupWhole wheat flour

2teaspoonsInstant coffee
1teaspoonCocoa powder
¾teaspoonSalt
4teaspoonsVital wheat gluten
teaspoonActive dry yeast -Large Loaf * see note---
2cupsVegetable broth; or water

3cupsRye flour
cupAll-purpose flour; unbleached
1cupWhole wheat flour
1tablespoonGarlic powder; or
6Cloves fresh garlic; minced
1tablespoonInstant coffee
2teaspoonsCocoa powder

5teaspoonsVital wheat gluten
2teaspoonsActive dry yeast

Directions

Pour all wet ingredients into bread machine baking pan. Measure all other ingredients except yeast into baking pan. Sprinkle yeast over dry ingredients, being careful not to get yeast wet. Use regular cycle or rapid bake cycle on your machine for this loaf.

NOTES : *Light weight machines such as DAK & WELBILT will have problems handling the heavy dough in this recipe.
