Fruit-filled acorn squash

Yield: 6 servings

Measure Ingredient
3 mediums Acorn squash (1 lb ea)
1 tablespoon Butter
1½ cup Granny smith apples
16 ounces Can whole-berry cranberry sauce

Place squash in a 13x9-inch baking dish. Bake at 400øF for 45 minutes or until tender. Or pierce squash with a fork and arrange on paper towels in microwave oven. Microwave on high 9-10 minutes or until tender.

Melt butter in medium nonstick skillet over medium heat. Add apple; saut‚ for 5 minutes. Stir in cranberry sauce; cook for 2 minutes or until apple is tender, stirring occasionally.

Cut squash in half lengthwise and discard seeds and membrane. Spoon ⅓ cup of fruit filling into each squash half.
