Fried butterfly shrimp

Yield: 4 servings

Measure Ingredient
2 pounds Large shrimp, cleaned, leaving tail intact
1 cup Sifted flour
½ teaspoon Sugar Pinch curry powder
1 Egg
1 cup Up water
2 Rsp oil
½ teaspoon Salt Oil for frying

Slit shrimp down back and spread apart butterfly fashion. Pull tail thru slit. Combine flour, sugar, and curry powder. Add egg, water, and 2 tsp oil; beat well. Dip shrimp in batter. Heat oil to 375 in deep skillet or deep fryer. Fry, a few at a time, until golden brown.

Drain on paper towels.
