Yield: 4 servings
|2 pounds||Large shrimp, cleaned, leaving tail intact|
|1 cup||Sifted flour|
|½ teaspoon||Sugar Pinch curry powder|
|1 cup||Up water|
|½ teaspoon||Salt Oil for frying|
Slit shrimp down back and spread apart butterfly fashion. Pull tail thru slit. Combine flour, sugar, and curry powder. Add egg, water, and 2 tsp oil; beat well. Dip shrimp in batter. Heat oil to 375 in deep skillet or deep fryer. Fry, a few at a time, until golden brown.
Drain on paper towels.
