1¼ pounds | Chicken breast fillets, cubed |
5 tablespoons | Oil |
1 cup | Thinly sliced celery |
1 medium | Onion, cut in juilienned strips |
1 \N | Red pepper, seeded and cut in julienned strips |
½ cup | Chicken broth |
1 cup | Walnut halves |
Mix soy sauce, sherry, sugar, salt and cornstarch together and combine with chicken cubes. Heat 1 tablespoon oil in fry pan and saute celery 1 minutes. Add onion, saute over high heat 1 minute. Add red pepper; saute 1 minute more. Remove vegetables from pan. Heat remaining oil in pan and cook chicken cubes 3 minutes, stirring frequently. Reduce heat and stir in chicken broth. Return vegetables and walnuts to pan and heat briefly. Serve with rice.
