Fresh minted mango-chutney burger topping

1Ripe mango (1 lb), halved,
Pitted peeled & cut in small
Pieces
2tablespoonsMinced red onion
2tablespoonsFresh lime juice
1tablespoonMinced crystallized ginger
¼teaspoonCrushed coriander seeds
¼teaspoonCrushed red pepper
1tablespoonChopped fresh mint

Directions

Gently mix all ingredients, except mint, in a bowl until well blended.

Cover & chill at least 2 hours or up to 4 days. Stir in mint 15 minutes before serving.
