Fresh mango chutney

2cupsDiced mango (avoid fibrous parts)
¼cupChinese preserved black beans, rinsed
¼cupGreen onions, thinly sliced on the bias
Oregano
Zest and juice of one lime
Zest and juice of one orange
¼cupDiced red onions
2tablespoonsGrated ginger
2Red jalapeno peppers, sliced in thin circles
1smallSweet red pepper, diced
¼cupRice wine vinegar
1cupLight olive oil
1tablespoonToasted cumin seed

Directions

½ CUP MIXED, CHOPPED FRESH

Mix together all ingredients; adjust seasoning with salt and citrus.

Let sit for a few hours before serving.
