Fresh coconut and mint chutney

1Piece Peeled ginger - (quarter-size); sliced
½cupDrained plain yogurt
3tablespoonsWater
3tablespoonsLime juice
1tablespoonRaw sugar
teaspoonSalt
cupMint leaves
1cupFreshly-grated coconut

Directions

In a blender combine all the ingredients. Pulse until pureed. Add more yogurt or water to thin sauce, as desired. Transfer to a serving bowl.
