YIELD: 1 SERVINGS
In mixing bowl, stir together the flour, brown sugar, corn starch and salt. Add vegetable oil and egg white and stir until smooth. Add water and grated citrus peel and stir again. Grease the skillet or frying pan and place over medium heat. As soon as the skillet is heated, drop a tablespoon of batter onto it and rotate skillet so that batter spreads into a thin 3½ inch circle. Cook for 4 minutes, turn batter over and cook 2 minutes more. Working quickly, remove batter and place the fortune across the center of the cookie, fold in half, then bend slightly over the edge of mixing bowl. cool.
