HOW TO KNOW IF YOUR SPICES ARE STILL GOOD -- Take a quick whiff of yoru cinnamon, cloves, etc. to insure freshness. According to the American Spice Trade Association, if you need to take a second whiff, it's a sign you need to replace spices. For recipes to give perfect flavor, they must be prepared with fresh spices.
