Fish fumet

Measure Ingredient
2 pounds Fish trimmings Do not use Salmon
2 quarts Cold water
¼ cup Tarragon vinegar
2 \N Celery stalks with leaves cut into 2-inch pieces
2 \N Carrots; cut into 2\" pieces
2 \N Leeks; white part only, split
½ medium Head of lettuce
10 \N White peppercorns
5 \N Dill sprigs, fresh
3 \N Parsley sprigs
2 \N Bay leaves
1 teaspoon Dried thyme
1 teaspoon Salt

Combine all ingredients in 4- to 5-quart saucepan and bring to boil.

Reduce heat and simmer uncovered 45 minutes. Strain through colander or cheesecloth-lined strainer before using. ---
