Filled popovers

Yield: 24 Servings

Measure Ingredient
4 \N Eggs
3 cups Milk
2 tablespoons Melted butter or oil
1½ cup Flour
1 teaspoon Salt
\N \N Oil; as needed
12 cups Desired filling (see instructions)

From: christi@... (Christi Wilson) Date: Wed, 15 Feb 1995 23:25:42 GMT Beat together eggs, milk, and butter. Separately, combine flour and salt, make a well, and add 1½ cups of the egg mixture. Beat until smooth.

Slowly whisk in remaining mixture to create a thin batter. Let stand at least 30 min.

Put 1 tsp. butter or oil into each well of a 24 x ½ cup muffin tin. Heat in a 400 degreesF. oven for 2 min. Fill each ¾ full with batter and cook for 18 to 20 min., or until golden and puffed. Fill with ½ cup desired filling.

Suggested fillings: Ratatouille, cheddar cheese and broccoli, creamed chicken, beef stew or stroganoff, ham and Swiss. Yield: 24 popovers REC.FOOD.RECIPES
