Fennel vinaigrette dressing

| ½ | cup | Olive oil |
| ½ | cup | Green Leaf fennel leaves |
| ¼ | cup | Lemon juice |
| 1 | Garlic clove; peeled | |
| 1 | pinch | Salt |
| 1 | pinch | Sugar |
Directions
In a small saucepan, heat oil, fennel leaves, lemon juice, crushed garlic and salt and sugar. Simmer over low heat for 5 minutes. Pour over a bowl of sweet red onion and thinly sliced cucumber.
