Eggplant and tomatoes over rice noodles

Measure Ingredient
1 \N Eggplant (cubed to
\N \N 1/4*to*1/2 inch cubes)
1 can Tomatoes (either use whole
\N \N And chop, of buy chopped)
½ pack Rice noodles (glass noodles)
\N \N Precooked
\N x Salt (optional)

In microwave container, layer eggplant, salt, tomatoes, and rice noodles in that order. Microwave high until eggplant is to taste - it takes me 10 minutes on high. Mix everything and enjoy.

Variation: Use sticky rice instead of the noodles.
