|\N \N||1/4*to*1/2 inch cubes)|
|1 can||Tomatoes (either use whole|
|\N \N||And chop, of buy chopped)|
|½ pack||Rice noodles (glass noodles)|
|\N x||Salt (optional)|
In microwave container, layer eggplant, salt, tomatoes, and rice noodles in that order. Microwave high until eggplant is to taste - it takes me 10 minutes on high. Mix everything and enjoy.
Variation: Use sticky rice instead of the noodles.
