1. In a medium frying pan, melt butter with olive oil over medium heat. Add onion and prosciutto or ham and cook 2 to 3 mins, or until onion is softened. Add peas and stock, increase heat to medium-high, and cook uncovered 3 mins.
2. Add cream and cook 3 to 5 mins, until liquid is reduced and peas begin to collapse and turn brown. Season with salt and pepper.
