Dinner-in-a-pumpkin

Yield: 8 servings

Measure Ingredient
1 medium Pumpkin
2 pounds Lean Ground Beef
1 teaspoon Salt
½ cup Celery, chopped
½ cup Onion, chopped
¼ cup Green Pepper, diced
¼ cup Soy Sauce
2 tablespoons Brown Sugar, browned
1 cup Mushrooms, sliced & drained (4 oz. can)
1 cup Condensed Cream of Chicken Soup (10.5 oz can)
2 cups Hot Cooked Rice

Preheat oven to 375ø. Lightly grease a 10" circle in the center of baking sheet; set aside. Place pumpkin on a firm surface. Using a sharp knife cut out stem end about 3" around stem. Cut on diagonal by slanting knife from outer edge of pumpkin toward center. Reserve top of pumpkin. Remove seeds and pulp; discard. In a medium bowl, combine ground beef, salt, celery, onion and green pepper, soy sauce, brown sugar, mushrooms, soup and rice. Spoon mixture into pumpkin.

Replace top of pumpkin. Place filled pumpkin on greased cookie sheet.

Bake about 1 hour in preheated oven until pumpkin is tender. To Serve, spoon some of cooked pumpkin and meat filling onto plates.

For a HALLOWEEN treat, paint a face on the pumpkin with acrylic paints before it is baked.
