Delmonico's deviled chicken

Yield: 4 Servings

Measure Ingredient
3 pounds Chicken, in quarters/pieces
1 tablespoon Mustard,prepared
½ teaspoon Salt
1 cup Bread crumbs, freshly made
1 tablespoon Butter, softened
1 tablespoon Vinegar
¼ teaspoon Cayenne, or to taste

Prehead oven to 375f. Wipe the chicken with a paper towel. Mix the= butter, mustard, vinegar, salt and cayenne, and rub the mixture all over the skin side of the chicken.=14Place the chicken, skin side up, in a shallow= roasting pan. Sprinkle evenly with th crumbs and bake for about 40 minuts, or= until meat thermometer rgisters 170f in the breast meat, 185 in the dark meat. Submitted By JSCHLANK@...
